Directions
Pat drumsticks dry, then rub thoroughly with oil and spice mix, ensuring full coverage.
Marinate for at least 2 hours (overnight for best flavour).
Preheat oven or grill to 200°C / 400°F.
Arrange chicken on a tray or grill rack.
Cook for 30–35 minutes, turning halfway, until cooked through with a slightly charred exterior.
Let rest for 5 minutes before serving with sides.
