Peri-Peri Prawn Skewers

A fiery, Afro-Portuguese inspired spice mix that crackles with heat driven by punchy chilli, sharp garlic, and a bright hit of lemon that cuts through with a zesty kick.

ingredients

Raw prawns, peeled and deveined

 

Bangin Peri-Peri spice

 

Olive oil

 

Juice of 1/2 lemon

 

Salad leaves or rice, to serve

Directions

Pat the prawns dry, then mix with spice, olive oil, and lemon juice until evenly coated.

Cover and marinate for 20–30 minutes (avoid longer to keep prawns tender).

Thread onto skewers.

Preheat grill or pan to medium-high heat.

Cook prawns for 2–3 minutes per side (they cook quickly), until pink and slightly charred.

Serve hot with salad or rice and an extra squeeze of lemon.
