peri-peri-meal

Peri-Peri

An African-inspired spice blend that dances like a rumba, led by bold garlic, savoury onion, warming mustard, and a twist of fresh lemon zest.

ingredients

Boneless chicken (thighs or breast), cut into bite-sized pieces

Garlic, minced

Vegetable oil or mustard oil

Salt (to taste)

Directions

This simple, no-fuss method shows you how to create fiery peri-peri chicken, packed with bold, zesty heat using Bangin Spice Mix for that classic, irresistible kick.

In a jug, combine 360ml of water with 40ml (4 tablespoons) of oil. Stir well and leave to stand for 5 minutes to allow the marinade to fully develop.

This marinade is sufficient for 2 whole chickens (or equivalent portions).

Coat the chicken evenly, ensuring every piece is well covered. Marinate for at least 10 minutes, or for deeper heat and flavour, leave overnight in the refrigerator.

Cook using your preferred method — air fryer, oven, grill, BBQ, or pan — until beautifully charred, slightly caramelised and cooked through.

Ensure the chicken is fully cooked and piping hot before serving.

Serve with spicy rice, grilled corn on the cob, crispy fries and a cooling garlic mayo or yoghurt dip for the ultimate peri-peri feast.
